Grilled Garlic Mushrooms with Bacon

When I'm eating out, I always find myself ordering the garlic mushrooms as a side. This craving inspired me to create this recipe, to make garlic mushrooms the main event. After all, they're just too tasty to be a side-dish. All you’ll need to make Dr Spages delicious garlic mushrooms is some good quality mushrooms and a few slices of bacon. With a low glycemic index, these garlic mushrooms are a diabetes-safe recipe. Not to mention, a healthy heaping of garlic eaten regularly has great anti-inflammatory properties and lots of anti-oxidants, perfect for those suffering with nerve pain. While bacon does have a high fat and sodium content, these garlic mushrooms just wouldn’t be complete without that extra burst of bacon flavor. If you’re focused on your weight, you can substitute the bacon or remove it entirely.

Ingredients
  • 2 cups mushrooms (sliced)
  • 3 slices of bacon (diced)
  • 3 tbsp parsley (finely chopped)
  • 3 tbsp olive oil
  • 3 garlic cloves (finely chopped)
  • salt and pepper
Instructions
  1. Pre-heat grill on medium-high heat.

  2. Place all ingredients in a bowl and combine well.

  3. Place ingredients on the grill and cook, stirring occasionally for 5-8 minutes, or until the bacon has become slightly crispy and mushrooms have begun to shrivel.

  4. Add salt and pepper to taste. Serve immediately.
