Zucchini Pancake Breakfast Tower

Breakfast towers can be a little daunting if you're looking for a simple and quick recipe. However, you'll only need a few ingredients to make this delicious zucchini pancake tower. All the ingredients included in this zucchini pancake tower are diabetes and neuropathy safe, for a perfect healthy breakfast. Once the prep work is done, then you can get onto the fun part - stacking your zucchini pancake towers with all the tasty toppings you could ever want. This makes this a great recipe if your family is trying out healthy eating habits, as kids will love to build their own breakfast towers. For our toppings, we chose kielbasa, guacamole, and spinach all included in a baked egg, which makes for much easier stacking. Don’t forget the toothpicks so your towers don’t fall over.

Ingredients
Ingredients For Pancake:
  • 1 zucchini
  • 1 egg
  • 2 tbsp almond flour
Ingredients for Tower:
  • 2 eggs
  • 1/2 cup fresh spinach
  • 2 oz turkey kielbasa
  • 2 tbsp guacamole
  • 2 tbsp diced, jarred, roasted red pepper
Instructions
  1. Shred the zucchini and squeeze out all the water. Mix with the egg and almond flour.

  2. Add salt and pepper to taste.

  3. Using a non-stick skillet, make the mixture into three pancakes.

  4. Go low and slow so the inside cooks before the outside burns, about 3 minutes per side.

  5. Set aside.

  6. In three 4 ounce ramekins (small ceramic or glass serving bowl) divide the spinach, egg and turkey kielbasa in each ramekin and microwave for 1 minute.

To assemble your savoury pancake tower:
  1. Place one zucchini pancake on the bottom, then add the egg/spinach/kielbasa layer on top of that, then add guacamole and diced red peppers over the top.
